It was raining fiercely when I drove to pick up this weeks’ box at Beaverland Farms. I suppose it’s good for growing things, but I’d rather not be sopping wet! Ah well, it’s CSA 2022 week 6, and not only is there more rhubarb, but there’s asparagus!
Asparagus is one of the first crops of spring, and the season lasts only 6-8 weeks. In peak season, the spears will grow as much as 2 inches per day. I’m hoping for much more asparagus in the coming weeks.
In the CSA 2022 week 6 box:
- salad turnips (hakurei)
- radishes
- rhubarb
- asparagus
- onions
- lots of spinach
With a CSA subscription, you don’t make a list and then go buy the produce: you get the box, and the goal is to use it all up before the end of the week. While trimming and washing the vegetables, I thought about how I might use them. So many ideas!
- creamy asparagus soup
- pasta with asparagus and mint
- a classic: asparagus rolled in ham slices, with Mornay sauce
- spinach rice with feta
- mac & cheese with spinach
- creamed spinach
- sautéed turnips with butter & lemon
- pan-seared turnips with ginger/miso glaze
- braised salad turnips
- garlic roasted radishes
- radish butter (for dipping or spreading)
- rhubarb breakfast cake
