Folks, we’re pitching right into autumn. The temperature is dropping, and while we are in no danger of frost this week, it’s clearly going to happen. Our farmers send us summer crops like beans or tomatoes as long as possible. Some of the tomatoes this week are green, since they wouldn’t have time to ripen on the vine. We also have potatoes, chives, apples, beet greens, and a few radishes.
Alas, tomatoes, we must begin our goodbyes. Fortunately we had a big tomato canning day this past weekend – more about that soon! Ideas to use this week’s bounty:
- green tomato spice cake
- pizza with green tomatoes
- greens with white beans and tomatoes
- green bean casserole for 2
- minestrone
- potatoes and beans with pesto
- potato soup with chives
- sautéed apples
