Just 2 Chocolate Chip Cookies

Sometimes you want just a couple of cookies. Not a full batch, not dozens, not a big tin full, but just two cookies. One for you, one for a friend – or maybe one for now, one for later. Just two. In fact, you can make just 2 chocolate chip cookies, and I’m here to tell you how.

This is all part of my quest to downsize in my kitchen: a small batch for nearly everything. This recipe, making just 2 cookies, is perhaps an extreme example, but it’s useful all the same. It uses ordinary ingredients in small amounts. It’s a great recipe to have on hand for those times when you need a homemade cookie but don’t want to haul out the mixer or end up with three dozen.

Impromptu cookie-making doesn’t need to make a lot of noise, either. You could call these stealthy cookies: a simple bowl and spoon, or a flexible spatula, hardly makes any noise at all, and your housemates might not even know there are cookies being made. You’ll have very few dishes, too: a single bowl, a flexible spatula, a tablespoon. And it takes very little time, as well: you can have just 2 chocolate chip cookies in 15 minutes with hardly any fuss: what’s not to like?

Ingredients

  • 3 Tablespoons all-purpose flour
  • 1 pinch baking soda
  • 1 pinch table salt
  • 1 Tablespoon unsalted butter softened
  • 2 Tablespoons packed brown sugar
  • 1 large egg yolk
  • teaspoon vanilla extract
  • 2 Tablespoons chocolate chips

Instructions

  • Adjust toaster oven or oven rack to middle position and heat oven to 350 ̊F. Line a small rimmed baking sheet (perhaps an eight sheet pan?) with parchment paper.
  • Whisk flour, baking soda, and salt together in a small bowl.
  • Using a rubber spatula, mash butter and sugar together in separate bowl until well combined and lightened in color. Add egg yolk and vanilla and mix until combined. Stir in flour mixture until just combined, then stir in chocolate chips.
  • Divide dough into 2, and put each part in a little heap on the prepared baking sheet, spaced about 2 inches apart. Bake until edges of cookies are set and beginning to brown but centers are still soft and puffy, 8 to 12 minutes.
  • Let cookies cool on sheet for 10 minutes.
