The tomatoes are here! Starting with very sweet ripe cherry tomatoes in red, purple, and gold, I’m looking forward to all the tomatoes to come. There can never be too many for me.
Week 8’s box also includes cucumbers, new potatoes, mixed herbs, Swiss chard, carrots, garlic, jalapeño peppers, and some larger green pepper, possibly an Anaheim, a mild chili pepper. There are great meals in store for us, which may include:
- chard pie with feta
- pickled carrot and radish slices (look for more on this to come)
- tomato gratin
- fresh tomato tart
- cucumber & tomato salad
- tzatziki
- quick refrigerator dill pickles from Smitten Kitchen
- Japanese cucumber salad (sunomono)
- Tuscan potato pizza: white pizza, thin sliced potatoes, drizzles of pesto
- potato and chard frittata
- dill pickled carrots
