CSA week 12 2020: bring on the beans! We have green beans, yellow beans, and purple beans (those will turn green when cooked). Summer’s here, and so are the summer veggies. Fantastic!
We might even have enough beans to make a pint or two of pickled dilly beans. If you’ve never had these, they’re like dill pickles, but made with beans: snappy, tart, salty, and – depending on what you put in the jar – perhaps just a bit spicy.
CSA week 12 veggies:
- a large bag of kale
- radishes
- parsley
- pint of cucumbers
- yellow beans
- purple beans
- green beans
Our beans might be steamed, sautéed, roasted, stir-fried, or pickled. Beans are incredibly versatile! Chilled cooked beans are terrific in salads. We’ll be eating the radishes like little candies. More ideas here:
