Now that the leaves are fully out on the trees, and we’re coming right up on Memorial Day, I think we can safely say spring is well advanced, and it’s about to be, or feel like, summer. Our farmers at Beaverland Farms in Detroit, MI tell us that the warmer weather is making a growth spurt happen among the crops. Our box of CSA 2023 week 5 is packed with greens, but also the first tender peas and sweet little beets. There’s even one last bunch of rhubarb!
I’ll take a great big salad to a weekend gathering of friends, so it’s good that I’ve got fresh greens to use. This week’s box contains:
- kale
- beets (both red and golden)
- green onions
- baby bok choy
- romaine lettuce
- salad mix
- sugar snap peas
- rhubarb
While I wash and package the veggies, I think about how I might use them – the goal is to use up all the produce before the next box comes in.
Here are some of my ideas for CSA 2023 week 5 produce:
- kale chips
- one last rhubarb crumble, a family favorite
- rosemary-roasted beets
- Greek salad, with some of those beets!
- stir-fried bok choy
- stir-fried shrimp & peas
