CSA 2022 week 8: can you believe it’s June already? Wow, and this is the 8th box from our farmers at Beaverland Farms. This week, the box moves away from all greens all the time, and starts to add some of the tender young peas I’ve been hoping for.
After a few days of really hot weather, we seem to have settled into moderate seasonal temperatures, which makes me very happy. It also seems to make the pea plants happy! That’s good news for me, because I love peas, and peas simply hate hot weather. When the thermometer goes high, the peas wilt (I’m with you, peas, so do I!)
Alas, no asparagus in this week’s box, but I do have:
- more rhubarb! (yay)
- mixed lettuces
- a small head of romaine lettuce
- big hefty radishes
- kohlrabi
- pea shoots
- snow peas
- a bunch of lavender
While I’m washing and trimming the veg, to get it all ready for storage and eventual use, I’m taking about all the good eating I might plan in the week to follow. CSA 2022 week 8 ideas, in no particular order:
- sliced kohlrabi with this splendid bean dip
- a small batch of rhubarb butter
- strawberry-rhubarb cobbler (note: we’ve made this, it’s great!)
- rhubarb breakfast cake from The View from Great Island
- radishes, sweet butter, and salt on sliced fresh bread
- grilled radishes with brown butter, thyme, and sea salt
- snow peas with butter & lemon
- stir-fried pea shoots with garlic
- lavender lemonade (yes, it’s warm enough!)
