Well, it’s finally here: CSA 2022 week 28, the very last week of bounty from our farmers at Beaverland Farms. Unsurprisingly, our box contains cool weather produce: potatoes, beets, and an adorable little butternut squash.
After this week, we’ll be visiting our local farmers market, where I’m sure we’ll be able to find hardy root crops, as well as brassicas like Brussels sprouts, kale, and cabbage. We’ll adapt to our off-season habits: make a list of supper ideas, and purchase veg to support that list. It’s absolutely the opposite of what we do during the CSA season.
This week’s box contains:
- bok choy
- beets
- mixed lettuce
- radishes
- green onions
- Italian (flat-leaf) parsley
- potatoes
- garlic
- a small butternut squash
Our habit during CSA season has been to look at the new box of veg, and whatever we still have on hand in the fridge, and come up with ideas to use everything up. It’s all great stuff, so how shall we use it? Here’s what I’m thinking about this week’s box:
- beet chocolate cake
- chilled beet salad with orange segments
- quick-pickled radishes and carrots
- roasted butternut squash with maple butter
- bok choy with garlic & oyster sauce
- roasted potatoes with garlic & rosemary
This post marks the end of the 2022 CSA season. In a week or so, I’ll post a gallery of all the photos and an analysis of the year, but I can already tell you we’re eager to sign up with our farmers next spring! We’ll be back to publishing kitchen adventures in the cooler months.
