Fall in Michigan: beautiful when it’s sunny, gloomy when skies are grey. Unsurprisingly after last week’s frost warning, we have green tomatoes in this week’s box from CSA 2022 week 27. Our farmers at Beaverland Farms can’t keep tomatoes growing forever, so it’ll be goodbye, tomatoes, see you next summer. Our box contains cool-weather produce: fennel, chard, potatoes. It’s time to get out the soup pot! This week our box brings us:
- Swiss chard
- mixed lettuce
- fennel
- potatoes (gold, red, and blue!)
- green onions
- carrots
- garlic
- green tomatoes
As I wash and trim the veg, I think about how I might use all this good stuff from CSA 2022 week 27. There might be a surprising spice cake, or a green version of classic tomato soup. Here’s what I’m thinking:
- roasted carrots with honey & garlic
- green tomato soup from withfoodandlove
- green tomato spice cake trust me, you can’t tell the tomatoes are in there
- potatoes roasted with fennel and herbs
- slow-cooked beef stew with potatoes and carrots
- Francis Lam’s ginger scallion sauce
- Chinese scallion pancakes
- roasted sweet potatoes with bacon & green onions
