CSA 2022 week 11 distribution

Our farmers at Beaverland Farms have given us another great box, and CSA 2022 week 11 brings us a happy surprise: strawberries! We have a lovely bowl of ripe berries that will get eaten today, because who wants to wait around when there are ripe berries?

CSA 2022 week 11 distributionIn the box this week, we can see a shift away from early spring produce:

  • mixed lettuce
  • Swiss chard
  • carrots
  • a small head of cabbage
  • garlic scapes
  • celery
  • a pint of strawberries

 

At the sink, while I wash and trim the vegetables, I think about how I might use all this good stuff. Here are some of my ideas for this lovely CSA 2022 week 11 box:

  • garlic scape and lemon compound butter
  • garlic scape pesto (never have enough of that!)
  • chopped garlic scapes for the freezer (so I can use them later in the year)
  • stuffed chard leaves
  • chard sautéed with garlic
  • quick-pickled cabbage
  • a tiny batch of coleslaw
  • carrot-ginger salad dressing
  • shredded carrot salad with parsley and pineapple
