Another week, another wonderful basket! We’ve had hot weather, which has been good for growing – no tomatoes yet, but beans! Zucchini!
Today’s harvest brought us fennel, kale, carrots, green and purple beans, zucchini, green onions, and garlic. I’m already thinking what these might turn into:
- stuffed zucchini with ground lamb and tomato
- baked kale chips
- green beans with hummus (no ned to cook the beans, these are sweet and fabulous!)
- dry-cooked beans with garlic and ginger
- so many stir-fry possibilities
- fennel-roasted fish from the NY Times
- pasta tossed with sausage and fennel
- summer minestrone soup from Simply Recipes
- grilled carrots with lemon and dill
- snacking!
