We had our first frost last Frida, so it’s only because our CSA has high tunnel greenhouses that we still have some tomatoes. This week our box contained sweet potatoes, red tomatoes, green tomatoes, baby ginger, beets, eggplants, and a greens mix for salads.
Of course, we’ll have our last summer salad; I love those greens with tomatoes, celery, and carrots among the crunchy bits. Other ideas for this week’s produce include:
- roasted sweet potatoes
- baked sweet potato chips with cumin or za’atar
- rosemary roasted beets
- orange and beet salad
- green tomato pizza
- green tomato spice cake
- tiny batch green tomato chutney
- oven-dried tomatoes to pack into the freezer
- tomato beef
Our CSA season has nearly ended: we have only one more week of distributions. We’ll still be eating local produce, though. Our town has a thriving and active Farmers Market, so look for some interesting and crowded photos to come!
