Tomatillos! This week’s basket has tomatillos, just in time to make a really interesting salsa with the last of the season’s tomatoes. We also have kale, baby collard greens, sweet potatoes, mint, celeriac, and nasturtium leaves and flowers for a bright peppery salad.
We are well into cooler weather. Let’s see, this week we might do lots of fun things with the vegetables, including some soups to ward off the chill:
- potato, sausage, and kale soup (copycat for Olive Garden’s Zippa Toscana)
- soup with leeks, potatoes, and celeriac (celery root)
- kale and potato soup
- baby collard salad with preserved lemons
- roasted sweet potatoes
- baked sweet potato chips with cumin or za’atar
- tomatillo salsa
- guacamole with tomatillos
