Our farmers tell us the tomato plants aren’t dead yet – isn’t that cheerful! I appreciate the tomatoes, though, so go, plants, go. Hang in there as long as you can. This week’s basket definitely shows the season: beets, broccoli greens, garlic, butternut squash, sweet potatoes, carrots, and mixed salad greens.
Those tomatoes will be treated as the little treasures they are. The rest of the basket is also wonderful, don’t you veggies get jealous. More ideas to use this week’s produce:
- cheesy rice-stuffed tomatoes
- beet salad with walnuts, peppers, and feta (look for the post later this week!)
- autumn lasagna
- butternut squash & spinach lasagna rolls
- sweet potatoes with miso pork
- maple-glazed carrots
- purple carrot slaw
- pickled carrots
